It made for a very late workout, but I enjoyed cooking and pretty much destroyed every flat service with prep bowls, spoons, bowls, measuring cups, etc. Hmm, really wasn&#8217;t missing that part, hah!<\/p>\n<p>Earlier this Summer I picked up <strong><em>Taste of Home&#8217;s Summer Appetizers Magazine<\/em><\/strong> while waiting in line at the grocery store. $9.99, ouch &#8211; but I did mark about 5 or 6 recipes, so that&#8217;s not too bad. I found a recipe for <strong>Zucchini Patties with Dill Dip<\/strong> and made some slight changes and was good to go.<\/p>\n<p>I bought a bunch of zucchini for my slicer, but also wanted to try something different. I had picked up some yellow squash at the produce ranch I visited last weekend and wanted to use that as well.<\/p>\n<p><strong>Dill Dip Ingredients:<\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-851\" title=\"DSC02697\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/dillsaucedsc02697.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>3\/4 Cup Sour Cream<br \/>\n2 Tablespoons Minced Fresh Dill<br \/>\n2\u00a0Teaspoons Lemon Juice<br \/>\nSalt and Pepper to Taste &#8211; I would say at least an\u00a01\/8 of a\u00a0teaspoon for each<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-852\" title=\"DSC02701\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/dillmixdsc02701.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p><strong>Directions:<br \/>\n<\/strong>Combine all ingredients in a small bowl, cover and refrigerate. (\u00a0The fresh dill smelled awesome).<\/p>\n<p><strong>Ingredients for the Patties:<\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-853\" title=\"IMG_1029\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/ingredients2img_1029.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>2.5 Cups Shredded Zucchini &#8211; I did a combo of zucchini and yellow squash<br \/>\n1 Cup Seasoned Bread Crumbs &#8211; I used Trader Joe&#8217;s Organic<br \/>\n1 Teaspoon Seafood Seasoning &#8211; I used Old Bay<br \/>\n1\/4 Teaspoon Garlic Powder<br \/>\n2 Eggs, \u00a0lightly beaten &#8211; the recipe only called for 1, definitely needs two.<br \/>\n2 Tablespoons Butter &#8211; melted<br \/>\n1 Large Carrot &#8211; thought I would need 2, but 1 was plenty<br \/>\n1\/4 Cup finely chopped onion &#8211; left my onion a little chunkier &#8211; used a white onion<br \/>\n1\/4 Cup All-Purpose Flour<br \/>\n1\/2 Cup Canola Oil<\/p>\n<p>I got everything prepped on my lunch hour.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-854\" title=\"IMG_1033\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/shreddedzimg_1033.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>I got the zucchini and squash washed, shredded and then I removed the excess liquid by squeezing the shredded pieces between paper towels.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-855\" title=\"IMG_1035\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/carrotsimg_1035.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>I got my carrots and onions chopped and to be honest, wasn&#8217;t very precise with the chopping or measuring. I was in a rush due to the time constraints. I got everything loaded into the fridge and waited to do the rest after work.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-856\" title=\"IMG_1037\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/breadcrumbsimg_1037.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>I started by combining my breadcrumbs, seafood seasoning and garlic powder in a large bowl. I got all of the dry ingredients mixed well and then I added 1 lightly beaten egg and the butter. I\u00a0then blended everything\u00a0before adding the carrot, onion, zucchini and squash.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-857\" title=\"IMG_1039\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/miximg_1039.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>I gave \u00a0it another good mixing&#8230;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-858\" title=\"IMG_1040\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/mix2img_1040.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>This is when I realized I needed another egg. The mixture wasn&#8217;t holding together well enough to make the patties. I quickly added a second lightly beaten egg and that worked out great. I then placed the 1\/4 cup of\u00a0flour into a shallow dish to make it easier to coat the patties before frying. My hands were too gummed up to grab the camera for that step.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-859\" title=\"DSC02707\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/formdsc02707.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>I started forming the patties and then got them coated with flour before putting them into the canola oil. I had the stove set to high at first and then turned it down to medium\/high for the cooking. They sizzled as they entered the pan.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-860\" title=\"IMG_1041\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/oilimg_1041.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>I cooked them\u00a0for about 3-4 minutes on each side. I removed them with a spatula onto paper towels and then served them with the dill dip. The recipe said that it yielded 2 dozen &#8211; I made 5 large patties and then put the rest of the mixture in the fridge for future meals &#8211; probably had enough to make 5 or 6 more. I was eating them as a main dish, so I wanted bigger portions. I grabbed about a golf ball size of the mixture before forming the patties for mine.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-861\" title=\"IMG_1046\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/finalimg_1046.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>They were awesome. I am thinking they would also be good as veggie burgers wrapped in lettuce&#8230;yum!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-862\" title=\"IMG_1049\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/forkimg_1049.jpg\" alt=\"\" width=\"400\" height=\"299\" \/><\/p>\n<p>I don&#8217;t usually eat a lot of fried foods, but these weren&#8217;t greasy at all. They did not taste heavy and\u00a0it was another fun way to incorporate zucchini and other veggies \u00a0into a main meal.
