I searched the Internet for options and thumbed through a bunch of cookbooks. I ended up using a Giada De Laurentiis <a href=\"http:\/\/www.foodnetwork.com\/recipes\/giada-de-laurentiis\/israeli-couscous-with-apples-cranberries-and-herbs-recipe\/index.html\" target=\"_blank\">recipe<\/a> as my base &#8211; but changed it up with substitutions and deletions &#8211; especially after reading some of the review feedback on the Food Network website.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9412.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7372\" title=\"IMG_9412\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9412.jpg\" alt=\"\" width=\"433\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9412.jpg 433w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9412-300x207.jpg 300w\" sizes=\"(max-width: 433px) 100vw, 433px\" \/><\/a><\/p>\n<p><strong>The Ingredients:<\/strong><\/p>\n<p>2 Cups Pearl Couscous (Also known as Israeli Couscous)<br \/>\n2 Tablespoons Extra Virgin Olive Oil<br \/>\n4 Cups Vegetable Broth<br \/>\n1 Cup Dried Cranberries<br \/>\n1.5 &#8211; 2\u00a0 Medium Granny Smith Apples &#8211; diced<br \/>\n1\/2 Cup Pine Nuts &#8211; toasted<br \/>\n1\/4 Cup Red Onion &#8211; finely chopped<br \/>\n1\/4 Cup Flat Leaf Parsley &#8211; finely chopped<br \/>\n1 Tablespoon Fresh Rosemary &#8211; finely chopped<br \/>\n2 Heaping Teaspoons Fresh Thyme &#8211; finely chopped<\/p>\n<p><strong>Vinaigrette Ingredients:<\/strong><\/p>\n<p>1\/4 Cup Apple Cider Vinegar<br \/>\n2 Tablespoons Maple Syrup<br \/>\n1\/4 Cup Olive Oil<br \/>\n2-3 Teaspoons Lemon Juice<br \/>\nZest of 1 lemon<br \/>\n1 Teaspoon Salt<br \/>\n1 Teaspoon Ground Pepper<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Heat the 2 tablespoons of olive oil in a medium sized saucepan over medium-high heat.<\/li>\n<li>Add the pearl couscous and cook &#8211; stirring occasionally until slightly browned\u00a0 (4-5 minutes)<\/li>\n<li>Add the veggie broth and bring to a boil. The veggie broth will turn the couscous an orange color, chicken stock would leave it more natural in color.\u00a0 Simmer until the liquid has mostly evaporated &#8211; Giada&#8217;s recipe suggested 10-12 minutes, mine took just over 15.<\/li>\n<li>Transfer the cooked couscous to a large bowl and set aside for cooling. Add the parsley, rosemary, thyme, red onion, apple, dried cranberries, and toasted pine nuts.<\/li>\n<li>For the vinaigrette: In a medium sized bowl, combine the vinegar, maple syrup, lemon juice, lemon zest and salt, and pepper. Whisk in the olive oil until smooth. Pour the vinaigrette over the couscous and toss to coat evenly.<\/li>\n<\/ol>\n<p>The salad can be served warm or cold &#8211; I really liked it either way. I simply love that it doesn&#8217;t overpower things when added to other herbs. If you aren&#8217;t a rosemary fan, you definitely will want to cut down on that ingredient &#8211; because it was a strong player in this recipe.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9433.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7377\" title=\"IMG_9433\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9433.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9433.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9433-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I diced up my apples (cut the apples into wedges and ended up eating 2 &#8211; so 1.5 apples were used) and then added a little extra lemon juice and zest before adding them to the couscous bowl.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9436.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7378\" title=\"Toasted Pine Nuts\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9436.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9436.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9436-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I had pine nuts left over from my <a href=\"http:\/\/foodiddy.com\/?p=7348\" target=\"_blank\">pomegranate salsa<\/a> &#8211; so I used those instead of Giada&#8217;s suggested slivered almonds from her recipe.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9439.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7379\" title=\"IMG_9439\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9439.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9439.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9439-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The lemon juice\/zest really helped the vinaigrette &#8211; as did the addition of salt. You might have to play around with the measurements of salt and pepper &#8211; it&#8217;s personal taste on those. Giada&#8217;s recipe must have a typo&#8230; hers had a tablespoon of salt&#8230; that&#8217;s a whole BUNCH of salt &#8211; I also think where the majority of the negative review feedback stemmed from.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9463.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7380\" title=\"IMG_9463\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9463.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9463.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9463-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I thought the liquid was going to be too much, but it turned out perfect. If you plan on storing the dish overnight before serving, you might want to leave the nuts out until before serving &#8211; unless of course you go with a heartier nut.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9450.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7381\" title=\"IMG_9450\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9450.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9450.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9450-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The Giada recipe stated 4-6 servings &#8211; We had 7 people and had enough left overs for 4-5 more.
