I think I quite possibly could have made the best lunch ever today.<\/p>\n<p>A few weeks ago I was thumbing through a <em>Good Housekeeping<\/em> magazine that my Mom had given me and the May 2012 &#8220;<em>YourGoodHouse<\/em>&#8221; supplement fell out of it. The front page showed that it included\u00a0 an article &#8220;Mexican Cooking Made Simple&#8221; &#8211; I immediately thumbed to it and there was a feature with Food Network chef Marcela Valladolid from the show &#8211; <em><strong>Mexican Made Easy<\/strong><\/em>. The very first recipe for <strong>Pomegranate, Basil &amp; Queso Fresca Salsa<\/strong> caught my eye. Every time I went to the store I tried to remember the ingredients, but finally decided to just type them into my iPhone for a future shopping trip.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/pomegranate-salsa.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7350\" title=\"pomegranate-salsa\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/pomegranate-salsa.jpg\" alt=\"\" width=\"450\" height=\"318\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/pomegranate-salsa.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/pomegranate-salsa-300x212.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><strong>The Ingredients<\/strong>:<\/p>\n<p>1\/4 Cup Pine Nuts<br \/>\n1 Cup Pomegranate Seeds (From 1 Large Pomegranate)\u00a0 &#8211; I used 1 Trader Joe&#8217;s clamshell package<br \/>\n2 Tablespoons Thinly Sliced Fresh Basil<br \/>\n2 Tablespoons Crumbled Queso Fresco &#8211; I used 3 tablespoons<br \/>\n1 Teaspoon Olive Oil &#8211;\u00a0 I used 2 teaspoons<br \/>\n1\/4 Teaspoon Salt &#8211; I used ground sea salt<br \/>\n1\/8 Teaspoon Ground Pepper &#8211; I used 1\/4 teaspoon<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Toast pine nuts in dry skillet over medium heat for 4 minutes until golden.<\/li>\n<li>Transfer to plate to cool.<\/li>\n<li>In small bowl, mix pomegranate seeds, basil, queso fresco, and cooled pine nuts.<\/li>\n<li>Drizzle with olive oil and season with salt and pepper. Mix again until well combined.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9368.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7351\" title=\"IMG_9368\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9368.jpg\" alt=\"\" width=\"450\" height=\"304\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9368.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9368-300x202.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I had to get a photo of me toasting money&#8230; ha! ha! &#8211; pine nuts are ridiculously expensive due to the labor intensive work involved in extracting them from the pine cones. I got mine from the bulk bin at Sprouts. I&#8217;m pretty sure Trader Joe&#8217;s sells a package for around $8.00 &#8211; but I only needed 1\/4 cup. Make sure you store any leftovers in the fridge, because due to the high fat content, they go rancid rather quickly. I created a lemon juice marinade for my chicken breast last night (lemon juice, lemon zest, olive oil salt and ground pepper) and then grilled them today. I used La Tortilla Factory Handmade Style White Corn Tortillas.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9396.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7354\" title=\"IMG_9396\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9396.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9396.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/05\/IMG_9396-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The combination was incredible! I can&#8217;t wait to make these at my next dinner party. Super easy and they look and taste amazing.
