I just happened to have 4 heads of Colorful Harvest Cauliflower in my fridge that needed to be cooked. Cauliflower is an excellent source of vitamin C, fiber and potassium and I&#8217;ve loved it since I was a kid&#8230; kind of random, but true.<\/p>\n<p>The magazine had recipes for dip, a pasta dish, soup and roasted cauliflower with shallots and golden raisins. I didn&#8217;t have shallots on hand, I didn&#8217;t have regular breadcrumbs, only panko&#8230; so I decided to give it a try with what I had.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8669.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7212\" title=\"IMG_8669\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8669.jpg\" alt=\"\" width=\"450\" height=\"322\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8669.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8669-300x214.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 Large Head Cauliflower &#8211; cut into florets<br \/>\n1\/2 Medium Yellow Onion &#8211; thinly slices<br \/>\n4-5 Tablespoons Extra Virgin Olive Oil<br \/>\n4 Teaspoons Dijon Mustard<br \/>\n1.5 Cups Panko Breadcrumbs<br \/>\n1\/2 Cup Golden Raisins<br \/>\nSalt and Pepper to Taste<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>Preheat oven to 425 degrees F.<\/li>\n<li>Pre-cook cauliflower in microwave in shallow dish with some water for 2-3 minutes and pat dry with paper towels.<\/li>\n<li>Toss cauliflower with 2-3 tablespoons olive oil.<\/li>\n<li>Saute thinly sliced yellow onion until softened.<\/li>\n<li>Add cauliflower and onion to a rimmed baking sheet and add salt and pepper before placing into the oven.<\/li>\n<li>Roast for 15 minutes. Meanwhile, in a medium sized bowl, whisk together dijon\u00a0mustard and 2 tablespoons oil, then stir in panko breadcrumbs and golden raisins.<\/li>\n<li>Take cauliflower out of the oven after 15 minutes and sprinkle breadcrumb mixture over the top and roast until golden brown &#8211; about 15-20 more minutes.<\/li>\n<\/ul>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8673.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7215\" title=\"IMG_8673\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8673.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8673.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8673-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I used florets from all three different colored heads of cauliflower. I placed them in a shallow glass dish with less than an inch of water, covered them with a paper towel and microwaved them for 3 minutes. I then patted the florets dry on a towel.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8684.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7217\" title=\"IMG_8684\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8684.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8684.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8684-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The colors were so vibrant&#8230;<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8686.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7218\" title=\"IMG_8686\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8686.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8686.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8686-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I added the florets to a plastic bag with 3 tablespoons of olive oil and mixed things up really well.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8689.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7216\" title=\"IMG_8689\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8689.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8689.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8689-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I sliced up 1\/2 the medium onion and put it into a pan with some olive oil and salt and pepper and cooked them until they softened a bit.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8690.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7219\" title=\"IMG_8690\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8690.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8690.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8690-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I then combined the onion and cauliflower onto the baking sheet and put them into the oven for 15 minutes.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8675.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7220\" title=\"IMG_8675\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8675.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8675.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8675-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>While the cauliflower was roasting, I made the raisin, mustard and breadcrumb mixture. I whisked the mustard with 2 tablespoons of olive oil and then added the cup and a 1\/2\u00a0 of panko and 1\/2 cup of raisins.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8679.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7221\" title=\"IMG_8679\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8679.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8679.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8679-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The original recipe was for a smaller batch &#8211; but I used almost double the cauliflower, so I thought I&#8217;d need more of the crumb topping.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8693.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7222\" title=\"IMG_8693\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8693.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8693.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8693-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I coated the cauliflower and then put it back into the oven for an additional 20 minutes. The dijon, raisin and breadcrumb mixture was a perfect match to the cauliflower. Next time I might not use as much of the breadcrumb mixture and I also might try it without pre-cooking the cauliflower &#8211; just to see if the texture changes.
