I&#8217;ve posted other recipes on my blog using Colorful Harvest vegetables and they ended up using my <a href=\"http:\/\/foodiddy.com\/?p=5829\" target=\"_blank\"><strong>Cauliflower Spanish Rice<\/strong><\/a> recipe under the &#8220;blog recipes&#8221; section of their website and facebook page. I was excited to try their Whole Rainbow Crunch\u2122 Carrots and jumped at the chance when they offered to send me some. The carrots come in 2 lb. bags and I was sent 3 bags&#8230; which I shared with friends.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8583.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7167\" title=\"IMG_8583\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8583.jpg\" alt=\"\" width=\"450\" height=\"292\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8583.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8583-300x194.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The colorful Rainbow Crunch\u2122\u00a0 Carrots are grown from heirloom seed varieties. I loved the different colors&#8230; shades of orange, red, yellow and a white (similar in color to parsnips) &#8211; The added color = a diversity of nutrients and antioxidants. They are basically a fun, foodie-licious way to add lots of flavor and color to your meals.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8586.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7168\" title=\"IMG_8586\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8586.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8586.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8586-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The carrots look so rustic, pretty sure I&#8217;m going to roast the ones I have left.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8587.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7172\" title=\"IMG_8587\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8587.jpg\" alt=\"\" width=\"450\" height=\"321\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8587.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8587-300x214.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I&#8217;ve made <strong>carrot ribbon salad<\/strong> before, nothing fancy &#8211; just a basic vinaigrette using red wine vinegar. Rainbow Crunch\u2122 Carrots<br \/>\n3-4 Tablespoons Olive Oil<br \/>\n1 Cube Dorat Crushed Ginger<br \/>\n1 Cube Dorat Crushed Garlic<br \/>\n1 Medium Sliced Shallot &#8211; thinly sliced<br \/>\nZest from 1\/2 a Lemon<br \/>\n2-3 Tablespoons Freshly Squeezed Lemon Juice<br \/>\n2 Teaspoons Honey<br \/>\n1 Tablespoon Flat Leaf Parsley &#8211; chopped<br \/>\nCrushed Red Pepper<br \/>\nSalt<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8598.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7173\" title=\"IMG_8598\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8598.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8598.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8598-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I got started making my carrot ribbons. I ran my veggie peeler the entire length of each carrot &#8211; holding the carrot firmly on the cutting board. I chose to not peel my carrots first.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8600.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7174\" title=\"IMG_8600\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8600.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8600.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8600-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I was left with a bunch of square carrot cores &#8211; which I chopped up and threw into a bag and placed into the freezer &#8211;\u00a0 to later add to something, maybe soup.<\/p>\n<p>I filled a large bowl with ice and cold water from the fridge and then started a big pot full of water on the stove.\u00a0 I added a pinch of sea salt to the big pot and brought it to a roaring boil. I added 2 of the 4 tablespoons of olive oil to a pan set to medium heat. I dropped in my frozen cubes of ginger and garlic and waited for the cubes to thaw out and separate. You could definitely use fresh garlic and ginger, I just didn&#8217;t have any. I took the mixture off the heat while I prepared the rest of the ingredients.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8603.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7178\" title=\"IMG_8603\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8603.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8603.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8603-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I zested 1\/2 of the lemon and then juiced it. I sliced the shallot, chopped the parsley and measured out my honey.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8612.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7179\" title=\"IMG_8612\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8612.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8612.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8612-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I added the lemon zest, lemon juice, shallots, honey, parsley and remaining 2 tablespoons of olive oil and whisked everything together. I then added 3 good shakes of crushed red pepper and a pinch of salt. You can use regular pepper if you want &#8211; the red did add some heat.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8613.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7180\" title=\"IMG_8613\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8613.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8613.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2012\/02\/IMG_8613-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I placed my carrot ribbons on paper towels and patted them dry with more layers of paper towels. This salad screamed SUMMER! and I loved every bite. You could definitely play around with measurements &#8211; less olive oil, more lemon juice&#8230; less honey, etc. I don&#8217;t thing there is a right or wrong to making the vinaigrette.<\/p>\n<p>Do you have a favorite carrot recipe to share?
