My Mom divides up her old magazines between the kids and we all share.\u00a0 I knew the fudge was going to be the second item on my holiday treat &#8220;to do&#8221; list.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6664.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-6209\" title=\"IMG_6664\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6664.jpg\" alt=\"\" width=\"450\" height=\"309\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6664.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6664-300x206.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><strong>The Ingredients:<\/strong><\/p>\n<ul>\n<li>8 oz. Cream Cheese &#8211; at room temperature<\/li>\n<li>2 Cups Confectioners&#8217; Sugar<\/li>\n<li>2 Teaspoons Pure Vanilla Extract<\/li>\n<li>3 Cups White Chocolate Chips &#8211; we used Nestle Toll House Vanilla Chips (about 18 ounces)<\/li>\n<li>2 Cups Mini Pretzels or Broken Pretzel Pieces &#8211; we broke up our mini pretzels &#8211; so there!<\/li>\n<li>1 Cup Dried Cherries &#8211; you could also use dried cranberries<\/li>\n<li>1 Cup Candy Corn<\/li>\n<\/ul>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6648.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-6210\" title=\"IMG_6648\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6648.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6648.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6648-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Line an 8 or 9 inch square pan with 2 sheets of parchment paper, leaving an overhang on all sides.<\/li>\n<li>Using an electric mixer, beat the cream cheese and sugar in a large bowl until smooth, about 2 minutes; beat in the vanilla<\/li>\n<li>Meanwhile, melt the chocolate\/vanilla chips in the microwave according to the package instructions &#8211; (I melted it using 30 second intervals at 60% power) &#8211; I went through 4 cycles, stirring in between with a rubber spatula.<\/li>\n<li>Add the melted chocolate to the cream cheese mixture and beat until smooth, 1 to 2 minutes.<\/li>\n<li>Fold in the pretzels and cherries.<\/li>\n<li>Transfer the mixture to the prepared pan and top with the candy corn.<\/li>\n<li>Refrigerate until firm, at least 2 hours.<\/li>\n<li>Using the parchment paper overhangs, lift the fudge out of the pan and transfer it to a cutting board and cut into 1 inch pieces.<\/li>\n<\/ol>\n<p>I wasn&#8217;t in my own kitchen, so I kept getting distracted when it came to progress\/step-by-step photos&#8230; sorry about that!<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6545.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-6212\" title=\"IMG_6545\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6545.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6545.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6545-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Vanilla chip and cream cheese mixture in the KitchenAid&#8230;<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6546.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-6213\" title=\"IMG_6546\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6546.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6546.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6546-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Mixture added to prepared 8 inch square pan&#8230;<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6548b.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-6222\" title=\"IMG_6548b\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6548b.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6548b.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/10\/IMG_6548b-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Topped with candy corn&#8230;<\/p>\n<p>While the fudge seemed really sweet (mostly because I haven&#8217;t had much sugar over the past 3 months) &#8211; I really liked how the flavors balanced out. The sweetness from the vanilla chips\/sugar, teamed with the tanginess of the cream cheese &#8211; the salty punch from the pretzels and a touch of tartness from the dried cherries. It worked well together. Would I change anything? Yes&#8230; the pieces I cut were way too big. The recipe said you should get 64 pieces from the pan &#8211; I now understand why. It was just really hard to cut through the candy corn, probably should have used a sharper knife.<\/p>\n<p>All in all, a success!
