{"id":5559,"date":"2011-08-12T16:47:45","date_gmt":"2011-08-13T00:47:45","guid":{"rendered":"http:\/\/foodiddy.com\/?p=5559"},"modified":"2011-08-12T16:56:19","modified_gmt":"2011-08-13T00:56:19","slug":"buffalo-chicken-and-blue-cheese-potatoes","status":"publish","type":"post","link":"http:\/\/foodiddy.com\/?p=5559","title":{"rendered":"Buffalo Chicken and Blue Cheese Potatoes"},"content":{"rendered":"<p>As part of the <strong>Foodbuzz Tastemaker program<\/strong>, I recently received\u00a0 a sample of one of KC Masterpiece&#8217;s new flavors: <strong>KC Masterpiece\u00ae Buffalo Marinade <\/strong>&#8211; Perfect for Summer BBQ&#8217;s. I&#8217;m not a huge fan of hot wings, and I&#8217;ve been grilling a lot, so I knew I wanted to use it for something else. I gave the marinade a taste and it definitely had a tangy kick to it. I looked on the bottle and saw that red pepper and paprika\u00a0were part of the ingredients. Tasty!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5563\" title=\"IMG_5329b\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5329b.jpg\" alt=\"\" width=\"365\" height=\"450\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5329b.jpg 365w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5329b-243x300.jpg 243w\" sizes=\"(max-width: 365px) 100vw, 365px\" \/><\/p>\n<p>Earlier in the week my co-worker Wendy had dropped a huge grocery bag of baby red potatoes on my desk. Attached was a cute little &#8220;ENJOY!&#8221; note &#8211; She admitted to wanting to see what I\u00a0could create with them. I guess her father-in-law has quite the garden and they were looking for new recipes to try. My wheels started turning and <strong>Buffalo Chicken and Blue Cheese Potatoes<\/strong> came to mind. I had never made them before, but was excited to create something new and different. My plan was to use the marinade with simple ingredients that I already had on hand.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5327_new.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5562\" title=\"KC Masterpiece Buffalo Marinade\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5327_new.jpg\" alt=\"\" width=\"450\" height=\"314\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5327_new.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5327_new-300x209.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5327.jpg\"><\/a><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\nRed Potatoes<br \/>\nChicken Breasts<br \/>\nSour Cream<br \/>\nBlue Cheese Crumbles<br \/>\nSalt and Pepper to Taste<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>Cover two chicken breasts in the KC Masterpiece\u00ae Buffalo Marinade and let simmer in the crock-pot on medium (mine\u00a0was set to\u00a0300 degrees) for about 4 hours. (They became super moist and I was easily able to shred the chicken\u00a0with a fork)<\/li>\n<li>Bake your\u00a0potatoes &#8211; temperature and time will vary depending on the size of your potatoes<\/li>\n<li>Cut each baked potato in half<\/li>\n<li>Use\u00a0a spoon to dig out a small area in the center of each baked potato<\/li>\n<li>Fill\u00a0the potato with\u00a0the shredded buffalo chicken mixture<\/li>\n<li>Add a spoonful of\u00a0blue cheese crumbles on top of the chicken<\/li>\n<li>Combine sour cream and pepper in a bowl and whisk together<\/li>\n<li>Drizzle sour cream on top of your potato creation and then drizzle a little more buffalo marinade on top of that<\/li>\n<li>Finish with a little salt and pepper<\/li>\n<\/ul>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5564\" title=\"IMG_5336\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5336.jpg\" alt=\"\" width=\"450\" height=\"329\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5336.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_5336-300x219.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I purposely left off measure amounts because this recipe could be tailored for 1 big potato or a bunch of little appetizer size potatoes. I filled my 10 potato halves and had buffalo chicken left over to use on salads. If you don&#8217;t &#8220;LOVE&#8221; hot and spicy, these little potato nuggets probably aren&#8217;t for you. I was\u00a0pleased with\u00a0the\u00a0flavor. I\u00a0definitely needed the sour cream and blue cheese to help cut through the kick, but I&#8217;m an absolute wimp when it comes to hot and spicy foods.<\/p>\n<p>These really would make great appetizers, I&#8217;m thinking Super Bowl\/football party grubbin&#8217;. 6 ingredients and you are good to go!<\/p>\n<p>Thank you Foodbuzz and KC Masterpiece\u00ae for giving me the opportunity to try the new marinade flavor, it was a hit at my house!<br \/>\n<a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/foo1121.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1460\" title=\"foo1121\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/foo1121.jpg\" alt=\"\" width=\"74\" height=\"41\" \/><\/a><\/p>\n<p><strong>P.S.
