I thumbed through magazines and cookbooks and decided on making <strong>Grilled Huli Huli Pork with Pineapples and Peppers<\/strong>. I loved that the blurb in my <em>&#8220;Cuisine Tonight Grilling Magazine<\/em>&#8221; said, &#8220;Say good-bye to plain pork chops, and say hello to grilled huli huli pork.&#8221; I pretty much hated pork chops as a kid. I&#8217;ve grown to like them as an adult, but they have to be grilled and seasoned well&#8230; or smothered in sauce.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4979_first.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5496\" title=\"huli huli pork\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4979_first.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4979_first.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4979_first-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>This Hawaiian-inspired meal included pineapple and pepper slices caramelized on the grill. I loved the bright, tropical flavors and will definitely be making this dish again. You could easily substitute chicken if you aren&#8217;t a pork fan.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4932.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5497\" title=\"IMG_4932\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4932.jpg\" alt=\"\" width=\"450\" height=\"329\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4932.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4932-300x219.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><strong>The Sauce Ingredients:<\/strong><br \/>\n1\/4 Cup Ketchup<br \/>\n2 Tablespoons Low-Sodium Soy Sauce<br \/>\n2 Tablespoons Light Brown Sugar<br \/>\n1 Tablespoon Vegetable Oil<br \/>\n1 Tablespoon Minced Garlic &#8211; I used crushed<br \/>\n1 Tablespoon Minced Ginger &#8211; I used crushed<br \/>\n1 Tablespoon Fresh Lime Juice<br \/>\n1\/4 Teaspoon Red Pepper Flakes<\/p>\n<p><strong>Sauce Directions:<\/strong><br \/>\nHeat ketchup, soy sauce, brown sugar, oil, garlic, ginger, lime juice, and pepper flakes in a saucepan over medium heat until sugar dissolves. Remove sauce from heat.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4934.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5498\" title=\"IMG_4934\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4934.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4934.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4934-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><strong>Ingredients for the Pork Chops:<\/strong><br \/>\n4 Boneless Pork Loin Chops &#8211; 1 inch thick, about 6-7 oz. each<br \/>\n2 Red Bell Peppers &#8211; stemmed and seeded<br \/>\n8 Fresh Pineapple Slices &#8211; 1\/2 inch thick &#8211; for grilling<br \/>\n8 Scallions &#8211; for grilling<br \/>\n2 Tablespoons Chopped Cashews<br \/>\n2 Tablespoons Chopped Scallions<br \/>\nSalt and Pepper &#8211; to taste<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4956.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5499\" title=\"IMG_4956\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4956.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4956.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4956-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4960.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5500\" title=\"IMG_4960\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4960.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4960.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4960-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>Prepare your bell pepper and onion for grilling<\/li>\n<li>Chop your cashews and green onion to later place on top of the pork after it is grilled<\/li>\n<li>Preheat grill to medium-high &#8211; brush grill grate with oil<\/li>\n<li>Season pork chops with salt and pepper<\/li>\n<li>Grill chops, covered, 6-7 minutes per side<\/li>\n<li>Brush chops with 1\/2 the sauce &#8211; reserve other 1\/2 to serve with pork<\/li>\n<li>Grill pork chops until they reach an internal temperature of 150 degrees F. on an instant read thermometer<\/li>\n<li>Remove chops from grill and tent with foil<\/li>\n<li>Next grill your peppers, pineapple slices and scallions &#8211; uncovered, until lightly charred (2-3 minutes per side) and remove from grill<\/li>\n<li>Slice peppers when cool enough to handle<\/li>\n<li>Serve chops with pineapple and pepper slices, grilled scallions, cashews, chopped scallions, and reserved sauce<\/li>\n<\/ul>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4961.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5501\" title=\"IMG_4961\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4961.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4961.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4961-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I used my handy dandy votive candle holder cutter to core my pineapple slices. Set your pork on top of 2 pineapple rings and place your grilled scallions on top of those.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4981.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5509\" title=\"IMG_4981\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4981.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4981.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/08\/IMG_4981-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I even broke out my fine china&#8230; fancy girl&#8230;<\/p>\n<p>The chops were a hit &#8211; like I said above &#8211; these will be had again, just not until &#8220;Cycle 2&#8221; of the 17 day diet (I&#8217;ll have to use low carb ketchup and I&#8217;ll have to 86 the brown sugar.) Right now (on Cycle 1) the only protein I can eat is salmon, sole, flounder, catfish, tilapia, canned light tuna in water, chicken breasts, turkey breasts, lean ground turkey and eggs. So far so good &#8211; almost done with day 3, only 14 more to go. \ud83d\ude42<\/p>\n<p><strong>The 17 Day Diet<\/strong> <strong>Update<\/strong><br \/>\nWhat I&#8217;ve learned:<\/p>\n<ul>\n<li>DO NOT wear high heels to work when the bathroom is several hallways away, especially when you are drinking water and green tea like it&#8217;s your job<\/li>\n<li>Green tea tastes like grass clippings<\/li>\n<li>I pretty much can&#8217;t stand plain Greek yogurt<\/li>\n<li>I&#8217;m not a Truvia fan<\/li>\n<li> A dressing made of balsamic, extra virgin olive oil, garlic gold, salt and pepper can pretty much rock any salad<\/li>\n<li>Lifetime Cheese has a fairly decent fat free jalape\u00f1o jack<\/li>\n<li>Working out for 17 minutes 2x&#8217;s a day is really kind of cool<\/li>\n<li>Husbands who fix loose wires on broken treadmills make me happy<\/li>\n<li>Miso is a probiotic<\/li>\n<li>Frozen red grapes really do complete me<\/li>\n<li>Fat-free sour cream, salsa and lime zest makes a mean dressing for ground turkey taco salad<\/li>\n<li>Creating a spreadsheet to be able to mark off all of my daily requirements is key<\/li>\n<\/ul>\n<p>That&#8217;s it for now&#8230; And yes, I&#8217;ve learned ALL of those things in the past 3 days.
