I really did a number on my back and have been off work and basically on bed rest since Saturday. This is my worst injury since I had my spinal fusion. I thought I&#8217;d just bounce right back like usual, not so much. I am getting better, it&#8217;s just taking time\/ice\/heat\/meds and a whole lot of doing nothing.<\/p>\n<p>Deede to the rescue &#8211; she played Foodiddy for a post and I couldn&#8217;t be more excited to feature her creativity here on my blog. This way your back can normalize from your mega (and dare I say, victorious) weed pulling, pruning and pool scrubbing extravaganza last weekend.<\/p>\n<p>So \ufb01rst order of business&#8230; deciding what to make. If I had my way it would be a pie, macaron, cookies, ice cream, basically anything sweet, but that wouldn\u02bct sustain my dear sweet Kath. She needs a healing food and since she doesn\u02bct have a cold, chicken noodle soup is out (also it\u02bcs currently 100+ degrees here). I don\u02bct know how \u201cfresh\u201d it really is)<br \/>\n2 T butter<br \/>\n2 T \ufb02our<br \/>\n2 cups Milk<br \/>\nGround nutmeg, to taste<br \/>\n1 cup grated fontina cheese, remove wax<br \/>\n1\/2 cup grated asiago cheese<br \/>\n1\/2 cup grated parmigiano-reggiano cheese<\/p>\n<p><strong>Directions:<\/strong><br \/>\nIn a large skillet pan fry each slice of prosciutto until crisp.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4566-x.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5103\" title=\"_MG_4566-x\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4566-x.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4566-x.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4566-x-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Turn once. About 2 mins. Drain gnocchi.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4602-x.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5113\" title=\"_MG_4602-x\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4602-x.jpg\" alt=\"\" width=\"450\" height=\"321\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4602-x.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4602-x-300x214.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Expert multi-tasking skills: At the same time as boiling water and cooking leeks, get a medium saucepan, melt butter over medium heat. Whisk in \ufb02our for 1 min.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4595-x.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5115\" title=\"_MG_4595-x\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4595-x.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4595-x.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4595-x-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Then slowly add the milk while whisking. This way you avoid the dreaded lumpy, lumpage. Season with salt, pepper and nutmeg. Cook until thickened, 5 mins. Turn off the heat.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4612-x.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5114\" title=\"_MG_4612-x\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4612-x.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4612-x.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4612-x-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Stir in fontina and asiago cheeses in batches until fully melted.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4576-x.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5116\" title=\"_MG_4576-x\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4576-x.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4576-x.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4576-x-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>But not before having some fun with your fontina cheese&#8230; Well hello there&#8230;<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4572-x.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5117\" title=\"_MG_4572-x\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4572-x.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4572-x.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4572-x-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Pre-heat broiler. In large bowl stir together gnocchi, leeks and cheesy mix. Pour mix into casserole dish. The recipe makes enough to \ufb01ll a 13&#215;9 casserole dish, but I used my Le Creuset rectangle baker set, given to me by Ms. Foo herself. One is 5&#215;7, the other 7&#215;10.5. Top with parmigiano-reggiano cheese and prosciutto. Broil until browned, 3-4mins.<\/p>\n<p><strong>Credit where due:<br \/>\n<\/strong>I got the recipe from <a href=\"http:\/\/www.rachaelraymag.com\/recipes\/rachael-ray-magazine- recipe-search\/rachael-ray-30-minute-meals\/leek-and-gnocchi-bake-with-three-cheeses- and-crispy-prosciutto\" target=\"_blank\">Rachael Ray<\/a>. The recipe says 30 mins&#8230; maybe for a super organized, multi-tasker. It usually takes me and hour to prepare this recipe, which is not uncommon for me when doing her recipes. There\u02bcs always lots of simultaneous steps.<\/p>\n<p><strong>Lessons Learned:<\/strong><br \/>\n1. Butter is quick to burn if you are holding a camera<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4610-x.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-5118\" title=\"_MG_4610-x\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4610-x.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4610-x.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/06\/MG_4610-x-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>2. It takes a LOT longer to prepare a meal and document it, than to just whip it up.<\/p>\n<p>3. Butter, Prosciutto and Cheese make camera equipment especially \ufb01lthy.<\/p>\n<p>4.
