{"id":478,"date":"2010-06-24T08:47:48","date_gmt":"2010-06-24T15:47:48","guid":{"rendered":"http:\/\/foodiddy.wordpress.com\/?p=478"},"modified":"2010-06-24T08:47:48","modified_gmt":"2010-06-24T15:47:48","slug":"curly-ribbon-zucchini","status":"publish","type":"post","link":"http:\/\/foodiddy.com\/?p=478","title":{"rendered":"Curly Ribbon Zucchini"},"content":{"rendered":"<p>Confession&#8230; it had been 4 days since I last used my handy-dandy slicer &#8211; it was time.<\/p>\n<p>For ONCE in my life, I no longer have any frozen pre-packaged meals in my freezer. I am really trying to make an effort to prepare all of my meals. I am very lucky in that I work only a few miles from home. \u00a0I don&#8217;t have to worry about packing a lunch or going out to spend extra money on top of the grocery bill I already have.<\/p>\n<p>This time I didn&#8217;t have a recipe in mind, I just knew I wanted to try a different blade on the slicer. I thought I had yellow zucchini, but it had gone bad &#8211; so I had one green one left. I searched through the pantry and fridge and came up with the following:<\/p>\n<p><strong>The Ingredients:<\/strong><\/p>\n<p><strong><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-481\" title=\"ingredients\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/06\/ingredientsdsc02144.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/strong><\/p>\n<p>1 Green zucchini<br \/>\n1<strong> <\/strong>Large handful of red grape tomatoes &#8211; I used 16<br \/>\nOil Cured Olives &#8211; 6-8<br \/>\nGarlic &#8211; 1 Clove<br \/>\nParmigiano-Reggiano Cheese &#8211; Shaved for topping<br \/>\n1\/2 cup Trader Joe&#8217;s Marinara Sauce<br \/>\nItalian Seasoning &#8211; a few pinches<br \/>\nGround Pepper<br \/>\nOlive Oil &#8211; Splash in\u00a0saut\u00e9\u00a0pan<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-482\" title=\"tomatoes and olives\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/06\/tomsdsc02145.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>I got the olive oil and garlic sizzling in the pan. I then sliced the tomatoes lengthwise, chopped up the olives and\u00a0saut\u00e9ed\u00a0them for a few minutes.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-483\" title=\"sauce\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/06\/saucedsc02147.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>I added the\u00a0marinara\u00a0sauce and let it simmer for about 5 minutes while I got the zucchini loaded into the <a href=\"http:\/\/foodiddy.wordpress.com\/2010\/06\/18\/zucchini-pasta\/\" target=\"_blank\">slicing contraption<\/a>. I decided to use the straight blade to make zucchini ribbon curls. I actually had to cut the curls because they were too long. One zucchini yielded about 3 cups. I got the ribbon curls added to the pan and tossed them into the sauce. I was surprised at how the curls held up &#8211; I half expected them to break and tear and that didn&#8217;t happen.<\/p>\n<p>The whole meal took under 15 minutes to prepare and about 5 minutes to eat &#8211; YUM!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-484\" title=\"final\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/06\/finaldsc02154.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>I have a feeling I will be eating a lot of zucchini and squash pasta this Summer. I think my next veggie to load into the contraption will be a cucumber &#8211; I see sunomono and other cucumber salads in my future.<br \/>\n<img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-64\" title=\"Foo\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/foo11.jpg\" alt=\"\" width=\"74\" height=\"41\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Confession&#8230; it had been 4 days since I last used my handy-dandy slicer &#8211; it was time.
