You&#8217;re part of the New Belgium Tastemaker Program!&#8221; I was excited. My brother introduced me to Fat Tire Amber Ale several years ago &#8211; one of New Belgium&#8217;s best selling beers. The objective of the challenge was to branch out and create a recipe that features (or pairs with) any of the New Belgium beers.<\/p>\n<p>I decided to use New Belgium&#8217;s Seasonal\u00a0<strong><a href=\"http:\/\/www.newbelgium.com\/beer\/detail.aspx?id=c5f9066e-4793-4622-b80a-59aa4376dfe6\" target=\"_blank\">Mighty Arrow Pale Ale<\/a><\/strong> for my recipes.<\/p>\n<p>My girlfriend Deede came over this past Saturday and the taste testing and recipe creation began. She came armed with a cookbook and big recipe binder and I had stacks of cookbooks and my iPad. We went back and forth &#8211; Savory? Sweet? We were throwing ideas out one after the other&#8230; We decided on doing both &#8211; but that kind of happened by accident. More on that later.<\/p>\n<p>First off&#8230;\u00a0the history and story behind <a href=\"http:\/\/www.newbelgium.com\/culture\/our-story.aspx\" target=\"_blank\"><strong>New Belgium Brewing Company<\/strong><\/a> and Mighty Arrow Pale Ale. According to the New Belgium website, Mighty Arrow Pale Ale is a brewed tribute to Arrow,\u00a0the owner&#8217;s\u00a0Aussie\/Boarder Collie mix who ran (literally) New Belgium for 12 years. When she wasn&#8217;t patrolling the brewery grounds, she was famous for her office visits. The website says she never met a tummy rub she didn&#8217;t like.<\/p>\n<p><strong>Sausage and Beer Caramelized Onion Tart<\/strong><\/p>\n<p><strong><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4432\" title=\"Mighty Arrow Pale Ale Tart Ingredients\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3440.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3440.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3440-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/strong><\/p>\n<p><strong>Tart Filling Ingredients:<br \/>\n<\/strong>1\/2 Cup New Belgium Brewing Company Mighty Arrow Pale Ale<br \/>\n3 Apple Chicken Sausages<br \/>\n5 Medium Size Sweet Onions<br \/>\nSalt<br \/>\nPepper<\/p>\n<p><strong>Tart Crust Ingredients:<\/strong><br \/>\n6 oz. All Purpose Flour<br \/>\n4 oz. Unsalted Butter &#8211; chilled<br \/>\n1\/2 Cup <a href=\"http:\/\/store.beechershandmadecheese.com\/p-29-flagship-1-lb.aspx\" target=\"_blank\">Beecher&#8217;s Flagship<\/a> Handmade Cheese (Aged Cheddar) &#8211; grated<br \/>\nPinch of Kosher Salt<br \/>\n3-5 Tablespoons Ice Water &#8211; just enough until the dough comes together<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4434\" title=\"IMG_3444\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3444.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3444.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3444-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><strong>Directions:<\/strong><br \/>\nWe prepped the crust ingredients, I broke out my 1980&#8217;s Cuisinart, and we pulsed the crust to perfection.<br \/>\n1.\u00a0 Blend your flour and salt in the food processor<br \/>\n2.\u00a0 Gradually add cheese and cubes of chilled butter &#8211; using pulse feature, cut in until mixture resembles coarse meal<br \/>\n3.\u00a0 Add a tablespoon of ice water while the processor is going<br \/>\n4.\u00a0 Keep adding ice water until you see small moist clumps form &#8211; ours needed 3 tablespoons<br \/>\n5.\u00a0 Remove dough from processor and gather into a ball<br \/>\n6.\u00a0 Flatten into disk,\u00a0cover in plastic wrap\u00a0and chill in fridge for an hour<\/p>\n<p>Note: The dough can be made up to two days ahead of time. Keep chilled and then soften slightly at room temperature before rolling out.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4435\" title=\"IMG_3456\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3456.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3456.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3456-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Deede took on the job of rolling out the crust &#8211; she is the crust\/pie queen. Once the dough was the right size, she\u00a0gently placed it into the tart pan. She then removed the overlap pieces of dough.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4436\" title=\"IMG_3461\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3461.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3461.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3461-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Bake the crust at 350 degrees F for 15 minutes and let cool\u00a0a bit before placing the topping into the tart crust. You might need to pierce the dough several times with a fork to keep it from puffing up. Deede uses pie weights, I didn&#8217;t have any.<\/p>\n<p>We both sliced onions. Deede taught me an Alton Brown trick and OMG &#8211; slicing onions with a handle &#8211; brilliant! You only cut the end off the top of the onion and you peel the skin layers down into a handle to\u00a0grip while you slice. Wish I would have gotten a picture, but we were up to our elbows in onions.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4437\" title=\"IMG_3450\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3450.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3450.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3450-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>We ended up doing 3 pans of onions so they would all be done around the same time. I added a little vegetable oil to the pans and\u00a0cooked them\u00a0over a medium to low temp until they softened and browned.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4438\" title=\"IMG_3453\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3453.jpg\" alt=\"\" width=\"450\" height=\"304\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3453.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3453-300x202.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>We cut our chicken apple sausage into pennies and we measured out our Mighty Arrow Pale Ale.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4439\" title=\"IMG_3458\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3458.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3458.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3458-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>We added the beer to the onion and sausage mixture and let it cook down until the liquid was absorbed &#8211; this took about 20 minutes on medium heat &#8211; we didn&#8217;t brown the sausage before adding it to the onions.<\/p>\n<p>Once the filling\u00a0is transferred into the tart pan,\u00a0place tart back into the oven at 350 degrees F. \u00a0for another 15-20 minutes &#8211; or until crust is slightly browned.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4440\" title=\"IMG_3500\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3500.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3500.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3500-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4442\" title=\"IMG_3505\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3505.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3505.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3505-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4445\" title=\"IMG_3533\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3533.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3533.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3533-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I loved the sweet flavor of the onions and sausage and I could definitely taste the cheddar and beer flavors as well.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/Tart_Recipe.pdf\"><strong>Printable Tart Recipe <\/strong><\/a>(.pdf)<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/Apple_Chicken_Sausage.pdf\"><\/a><\/p>\n<p>Next up &#8211; the Sweet Recipe &#8211; We had originally wanted to do something with apples as a topping to the tart. We ended up switching gears and creating recipe #2.<\/p>\n<p><strong>Beer Battered Apple Rings<\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4450\" title=\"IMG_3432\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3432.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3432.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3432-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><strong>Ingredients:<br \/>\n<\/strong>2 Granny Smith Apples &#8211; each apple made 6 rings<br \/>\n1\/2 Cup All Purpose Flour &#8211; plus a little extra for dredging<br \/>\n1\/2 Cup New Belgium Brewing Company Mighty Arrow Pale Ale Beer<br \/>\n1\/2 Teaspoon Salt<br \/>\n1\/4 Cup Fresh Lemon Juice<br \/>\n1 Tablespoon Brown Sugar &#8211; firmly packed<br \/>\nPowdered Sugar &#8211; for dusting<br \/>\nCaramel Sauce &#8211; for drizzling<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4451\" title=\"IMG_3465\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3465.jpg\" alt=\"\" width=\"450\" height=\"323\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3465.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/04\/IMG_3465-300x215.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Add flour, beer, and salt to a bowl and stir\/whisk until the batter is smooth. Let the batter stand, covered at room temperature for 15-20 minutes.<\/p>\n<p>Peel and core your apples and cut them into 1\/4 inch thick rings.<\/p>\n<p>In another bowl, combine the lemon juice and tablespoon of brown sugar. \u00a0Place apple slices on cookie sheets and sprinkle mixture on your slices and let sit at room temperature for 10-15 minutes.<\/p>\n<p>Place\u00a02 &#8211;\u00a02 1\/2\u00a0inches of vegetable oil in a heavy pot or skillet and heat until it reaches 375 degrees F.<\/p>\n<p>Lightly dust each apple ring with flour before\u00a0dipping them into the beer batter bowl. Coat well and let the excess batter fall back into the bowl. Using tongs, drop coated apple rings into the hot oil, turning once. They cook really fast. Less than 2 minutes for the entire process.
