Asparagus are everywhere right now and they are on sale.\u00a0 My Mom picked up a bunch over the weekend and it got me thinking of different recipes and possibilities.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4084\" title=\"asparagus\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2981.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2981.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2981-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4089\" title=\"IMG_2940\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2940.jpg\" alt=\"\" width=\"450\" height=\"363\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2940.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2940-300x242.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\nAsparagus &#8211; I bought organic from Trader Joe&#8217;s<br \/>\nProsciutto &#8211; I picked some up at Trader Joe&#8217;s &#8211; $6.99\/package<br \/>\nGoat Cheese &#8211; Trader Joe&#8217;s Brand<br \/>\nBalsamic Vinegar<br \/>\nKosher Salt<br \/>\nGround Pepper<\/p>\n<p><strong>Directions:<\/strong><br \/>\nSpread goat cheese on pieces of prosciutto, add a tiny bit of kosher salt (you could skip the step if you are watching your sodium &#8211; since the prosciutto is already pretty salty) and ground pepper.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4090\" title=\"IMG_2942\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2942.jpg\" alt=\"\" width=\"450\" height=\"270\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2942.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2942-300x180.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Add two asparagus spears and start rolling&#8230; the coated paper that seperates the pieces of prosciutto sure comes in handy for this step.<\/p>\n<p>\u00a0<img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4091\" title=\"IMG_2945\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2945.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2945.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2945-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Be careful, the prosciutto is delicate and can tear easily.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4092\" title=\"IMG_2947\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2947.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2947.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2947-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Once you get them rolled, add some balsamic to a small pan to make the reduction sauce. Use enough balsamic to allow it reduce by 1\/2. I used 2-3 tablespoons and had some left over. Bring the balsamic to a boil, whisking or stirring constantly to prevent burning. The vinegar naturally sweetens and you end up with a syrupy texture.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4093\" title=\"IMG_2948\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2948.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2948.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2948-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I used my grill pan for the asparagus\u00a0instead of the BBQ grill &#8211; it worked great. Heat the grill to medium\/high, set your asparagus bundles on the hot grill, and let sit for a minute or two before turning. Total cook time is about 6-8 minutes. I like my asparagus crunchy &#8211; so I ended up pulling mine right\u00a0at 6 minutes.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4094\" title=\"IMG_2954\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2954.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2954.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2954-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I drizzled my balsamic reduction over the grilled spears and they looked and smelled delicious.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-4098\" title=\"IMG_2970\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2970.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2970.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2970-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>They were incredible! I&#8217;ve had prosciutto wrapped asparagus before, but never with goat cheese. They were super easy to make and a perfect side dish or appetizer. I ended up eating mine as a main\u00a0meal. I did notice that the huge stemmed spears could probably have been split before rolling. That would most likely have helped them to cook a little more evenly.<\/p>\n<p>I still have some asparagus left that I will incorporate into salads. I used to be an asparagus hater&#8230; now I know it&#8217;s because I overcooked them. It&#8217;s definitely a texture thing for me. Stringy = Yuck! Grilling or roasting is the way to go.<\/p>\n<p>What&#8217;s your favorite vegetable?
