I get that it is an American tradition and that there are Irish people laughing at us on this day&#8230; but it was my family tradition and I loved it. Dan is not a fan of corned beef. No biggie, I decided to create my own tradition several years back. Corned beef sandwiches &#8211; he gets turkey. This year I switched it up a bit.<\/p>\n<p>I was looking online for turkey panini recipes andI found a couple for corned beef &#8211; mostly on rye bread with a Reuben flare. I did not want to be buying two kinds of bread, etc. and I&#8217;m not a fan of sauerkraut or Swiss cheese. \u00a0I found a recipe a few years back for a corned beef sandwich and then this year I found another online for a <strong>Corned Beef, Apple, Brie Panini with Whisky Glazed Onion<\/strong> <strong>Mayo<\/strong> &#8211; SIGN ME UP! \u00a0Again,\u00a0the recipe called for a different kind of bread. I decided to follow <a href=\"http:\/\/www.foxcharlotte.com\/home\/related\/Corned-Beef-Apple-Brie-Panini-with-Whiskey-Glazed-Onion-Mayo-117928809.html\" target=\"_blank\">the recipe<\/a>, but used the baguettes I already had and better whisky ;).<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3902\" title=\"IMG_2638\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2638.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2638.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2638-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><strong>The Panini Ingredients:<br \/>\n<\/strong>1 Baguette<br \/>\n1\/4 Pound Deli Sliced Corned Beef<br \/>\nSliced Brie Cheese &#8211; they suggested goat brie, I only had regular brie<br \/>\n1\/2 Granny Smith Apple &#8211; thinly sliced &#8211; some for the sandwich, some eaten as a snack while making the sandwich<\/p>\n<p><strong>Whisky Glazed Onion Mayo Ingredients:<br \/>\n<\/strong>1.5 Cups Yellow Onion &#8211; thinly sliced into half moon shapes<br \/>\n1 Tablespoon Unsalted Butter<br \/>\n1 Teaspoon Brown Sugar &#8211; I used a heaping teaspoon<br \/>\n1\/4 Teaspoon Kosher Salt<br \/>\n1\/8 Teaspoon Black Pepper<br \/>\n1 Ounce Maker&#8217;s Mark Whisky &#8211; they used 2 ounces of Jack Daniels<br \/>\n1 Cup Good Quality Mayo &#8211; I just used good ol&#8217; Best Foods.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3903\" title=\"IMG_2644\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2644.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2644.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2644-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><strong>Whisky Glazed Onion Mayo Directions:<br \/>\n<\/strong>Preheat pan to medium\/high heat. Melt butter and then add onions, brown sugar, salt and pepper.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3904\" title=\"IMG_2654\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2654.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2654.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2654-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Cook onions until they shrink to half their size. When the pan is almost dry&#8230;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3905\" title=\"IMG_2646\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2646.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2646.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2646-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>&#8230; add the whisky and reduce heat to low. Cook onions, stirring frequently, until golden brown, and most of the liquid has evaporated. Let me just say that I will be making these onions for everything &#8211; burgers, steaks&#8230;OMG, they were screamin&#8217; good!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3906\" title=\"IMG_2661\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2661.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2661.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2661-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Once the onions have cooled a bit &#8211; rough chop and then add them to the mayo.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3907\" title=\"IMG_2663\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2663.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2663.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2663-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>The recipe said you could store\u00a0the mayo in\u00a0an airtight container in the fridge for up to 2 weeks.<\/p>\n<p><strong>Panini Prep:<\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3908\" title=\"IMG_2656\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2656.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2656.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2656-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Thinly slice your granny smith apple and brie cheese.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3911\" title=\"IMG_2658\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2658.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2658.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2658-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Slice your baguette and start building your sandwich.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3910\" title=\"IMG_2672\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2672.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2672.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2672-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I put the brie on one side and the whisky glazed mayo on the other side of the bread. I then layered my apples and corned beef on the mayo side. I ground some pepper on top of everything, closed it up and then cooked it on my wannabe panini press&#8230;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3912\" title=\"IMG_2681\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2681.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2681.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2681-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>My George Foreman Grill came through like a champ. I set it for 5 minutes, but the sandwich was done in 4. Just apply slight pressure, if you push too hard, everything will ooze out the sides and you will have melted cheese everywhere. Been there, done that.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3913\" title=\"IMG_2689\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2689.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2689.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/03\/IMG_2689-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Is that not the most beautiful sandwich? Perfectly crisped\/grilled and ready to eat. If you don&#8217;t eat meat, this sandwich would taste good as a gourmet grilled cheese\u00a0&#8211; just leave out the corned beef. This would be the perfect meal for leftover corned beef. If you&#8217;ve got your crock-pot going today, make sure you set some corned beef\u00a0aside to give this a try.
