I was flipping through my $1.99 cheapo vegetarian cookbook and stumbled upon a recipe for <strong>Baked Eggs with Cream, Spinach and Parmesan<\/strong>.<\/p>\n<p>I had all of the ingredients and it was a simple 3 step recipe.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3386\" title=\"IMG_1853\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1853.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1853.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1853-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><strong>The Ingredients:<br \/>\n<\/strong>2 Tablespoons Butter &#8211; plus a little extra for greasing<br \/>\n4.5 Ounces Baby Spinach<br \/>\n1\/2 Teaspoon Freshly Grated Nutmeg<br \/>\n4 Small Eggs<br \/>\n1\/4 Cup Light Cream<br \/>\n2 Tablespoons Freshly Grated Parmesan Cheese<br \/>\nSalt and Pepper to Taste<\/p>\n<p>I cut the recipe in 1\/2 and only used 1 egg per dish.<\/p>\n<p><strong>Directions:<br \/>\n<\/strong>Preheat oven to 350 degrees F.<br \/>\n<strong>Step 1<\/strong> &#8211; Lightly grease 2 individual ceramic dishes &#8211; the recipe photo showed very shallow gratin dishes &#8211; I only had ramekins.<br \/>\n<strong>Step 2<\/strong> &#8211; Melt butter in a pan over\u00a0medium\/low and add the spinach.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3388\" title=\"IMG_1857\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_18571.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_18571.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_18571-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3390\" title=\"IMG_1859\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1859.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1859.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1859-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Cook spinach for 1-2 minutes, stirring with wooden spoon until spinach starts to wilt. I grated my own parm and it was more of a fine shred consistency.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3396\" title=\"IMG_1882\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1882.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1882.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1882-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Bake at 350 degrees F. for 5 minutes. Bread is my weakness.<\/p>\n<p><strong>Question: How do you like your eggs?<\/strong><\/p>\n<p>I grew up liking &#8220;egg in a hole&#8221; or fried with a fully cooked yolk.
