I&#8217;m going with fillo because the box I used has it plastered on the packaging. I picked up one of those little appetizer mini recipe books at the grocery check out before Thanksgiving. I promised myself that\u00a0I was\u00a0going to make every recipe in it for the hundreds of holiday parties that I was going to be invited to. I then found myself at home on Friday and Saturday nights watching movies with Dan. I decided that I no longer needed an excuse to make such a decadent treat. I purchased the missing supplies and got to work.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3262\" title=\"IMG_1682\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1682.jpg\" alt=\"\" width=\"450\" height=\"303\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1682.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1682-300x202.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>As soon as I had my fillo cups, ginger snaps, brie, and apricot preserves on the cutting board, I thought of another combination to try.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3264\" title=\"IMG_1684\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1684.jpg\" alt=\"\" width=\"450\" height=\"306\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1684.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1684-300x204.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Kind of cheesecake like. Graham crackers, brie, and raspberry preserves.<\/p>\n<ul>\n<li>1 package frozen miniature\u00a0fillo tart shells<\/li>\n<li>3 tablespoons crushed gingersnaps\/crushed\u00a0graham crackers\u00a0<\/li>\n<li>4-6 ounces brie cheese, rind removed, cut into small pieces<\/li>\n<li>1\/4 cup apricot and raspberry preserves<\/li>\n<\/ul>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3267\" title=\"IMG_1687\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1687.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1687.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1687-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>The first step was to crush the ginger snaps and the graham crackers. Rather than dirty the food processor, I placed them into bags and used the flat side of my Pampered Chef meat tenderizer to do the job.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3268\" title=\"IMG_1692\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1692.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1692.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1692-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I set the oven for 350 degrees F. and then got my fillo cups placed onto a baking sheet.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3269\" title=\"IMG_1693\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1693.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1693.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1693-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I spooned the ginger snap crumbles into 1\/2 the cups and the graham cracker crumbles into the other 1\/2.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3270\" title=\"IMG_1698\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1698.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1698.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1698-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I removed the rind from the brie and then cut it into small wedges and placed them on top of the crumbles.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3271\" title=\"IMG_1700\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1700.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1700.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1700-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I then used a small rubber scraper to place the preserves on top of the brie.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3272\" title=\"IMG_1702\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1702.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1702.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1702-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Once I finished with the apricot, I moved onto the raspberry preserves.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3273\" title=\"IMG_1705\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1705.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1705.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1705-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I placed the baking sheet into the oven and set the timer for 5 minutes. They ended up taking almost 10 minutes &#8211; I think my brie pieces were too thick.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-3274\" title=\"IMG_1737\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1737.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1737.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2011\/01\/IMG_1737-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>The apricot\/ginger snap cups tasted incredible &#8211; I am a huge fan of apricot preserves. I usually like them on toasted sourdough with butter &#8211; never peanut butter. Peanut butter and apricot doesn&#8217;t do it for me. Very different tasting. Dan is a huge fan of peanut butter and raspberry preserve sandwiches, so I knew he would like them more.<\/p>\n<p>These were a fun evening snack &#8211; they would be perfect for an appetizer\/dessert buffet. It was hard to get good photographs, I jumped back and forth from my 18-55mm to my 60mm macro and still had lighting issues.
