I was craving veggies and the thought of meat\u00a0sounded very unappealing. I&#8217;m still recovering from being sick &#8211; hope I get my appetite back soon. These certainly helped&#8230; they were delicious and I can&#8217;t wait to make them again. Next time I will half the recipe &#8211; it&#8217;s not Dan&#8217;s thing, so I had a lot of waste and I think they are best eaten immediately. Sweet Potatoes &#8211; I used two\u00a0white and 1 orange sweet potato &#8211; peeled and grated<br \/>\n1 Egg &#8211; lightly beaten<br \/>\n1\/3 Cup All-Purpose Flour<br \/>\n2.5 oz. Butter &#8211; melted<br \/>\n3.5 oz. Form your patties &#8211; I just grabbed a clump and made them like I would burgers. I flattened them a bit before adding them to the pan.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2692\" title=\"sweet-potato-patties-in-pan\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/12\/sweet-potato-patties-in-pan.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/12\/sweet-potato-patties-in-pan.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/12\/sweet-potato-patties-in-pan-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I did 4 at a time and made 3 batches &#8211; that only used about 3\/4 of the mixture. Cook on both sides until golden brown.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2693\" title=\"sweet-potato-patties-on-parchment\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/12\/sweet-potato-patties-on-parchment.jpg\" alt=\"\" width=\"450\" height=\"300\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/12\/sweet-potato-patties-on-parchment.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/12\/sweet-potato-patties-on-parchment-300x200.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Slide the patties onto a cookie sheet covered in parchment paper and bake for 15 minutes until crisp. I gobbled them up and will for sure be making them again. The sweetness of the potato combined with the feta and mint was a perfect blend of\u00a0sweet and savory.
