It looked a little involved &#8211; soaking beans overnight, finding corallini pasta, etc. and I didn&#8217;t feel like leaving the house to hit up the grocery store for missing ingredients. I knew I had a can of organic cannellini beans in the pantry and I had recently bought some organic vegetable\u00a0broth for another recipe &#8211; I had various boxes of pasta, so I decided to do my own version. Sort of the same ingredients, but not really.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2443\" title=\"IMG_1953\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1953.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1953.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1953-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><strong>The Ingredients:<br \/>\n<\/strong>1 Can of Cannellini Beans<br \/>\n32 oz. Vegetable Broth<br \/>\n8\u00a0oz. Water<br \/>\n4 oz. Gemelli Pasta<br \/>\n2 Tablespoons Olive Oil<br \/>\n2 Garlic Cloves &#8211; I used my frozen cubes<br \/>\n4 Tablespoons Flat Leaf Parsley &#8211; chopped<br \/>\nGarlic Gold Nuggets &#8211; I used\u00a03-4 shakes\u00a0for 1 bowl<br \/>\nSalt and Ground Pepper to taste<\/p>\n<p><strong>Directions:<br \/>\n<\/strong>Pour veggie\u00a0broth into a soup pot\/dutch oven and place on medium high heat &#8211; \u00a0let simmer while prepping the beans.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2444\" title=\"IMG_1958\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1958.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1958.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1958-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Rinse your beans and then put 1\/2 of them into the food processor with a tablespoon of olive oil, process to a smooth pur\u00e9e.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1959.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2446\" title=\"IMG_1959\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1959.jpg\" alt=\"\" width=\"336\" height=\"450\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1959.jpg 336w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1959-224x300.jpg 224w\" sizes=\"(max-width: 336px) 100vw, 336px\" \/><\/a><\/p>\n<p>Return the pur\u00e9e to the soup pot and stir well to mix.\u00a0The bean pur\u00e9e was the perfect thickening agent.\u00a0Add your second tablespoon of olive oil and 8 ounces of water and stir before adding the pasta.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2447\" title=\"IMG_1962\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_19621.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_19621.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_19621-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>Add the pasta and remaining beans\u00a0to the soup, return to a boil, and cook for 10-15 minutes, or until tender. Mine took a full 15 minutes. Once the pasta is fully cooked, add the flat leaf parsley, salt and pepper.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2448\" title=\"IMG_1963\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1963.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1963.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1963-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>I had been seeing <a href=\"http:\/\/www.garlicgold.com\/\" target=\"_blank\">Garlic Gold<\/a> on a lot of the food blogs that I read, so over the summer I found some at Taylor&#8217;s Market in the Curtis Park area of Sacramento, CA. I&#8217;ve been in love ever since. Toasted organic garlic sprinkles (nuggets)\u00a0added the top layer of\u00a0crunch I was looking for.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2449\" title=\"IMG_1976\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1976.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1976.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1976-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>This soup easily falls into my &#8220;top 5&#8221; favorite soups list. The only thing that disappointed me, was the fact that I didn&#8217;t make a bigger batch.\u00a0Next time I will double the recipe for sure. I ended up with 3\u00a0medium bowls. One in my belly and 2 in the fridge for lunches this week. Do you have a favorite bean soup? This was such a simple recipe, it will definitely be in my soup rotation from here on out. Corn chowder is still my favorite, but man o&#8217; man was\u00a0this good!
