{"id":2146,"date":"2010-11-02T06:31:43","date_gmt":"2010-11-02T14:31:43","guid":{"rendered":"http:\/\/foodiddy.com\/?p=2146"},"modified":"2010-11-02T06:31:43","modified_gmt":"2010-11-02T14:31:43","slug":"baked-plantain-chips","status":"publish","type":"post","link":"http:\/\/foodiddy.com\/?p=2146","title":{"rendered":"Baked Plantain Chips"},"content":{"rendered":"<p>I was thumbing through my September <em>Everyday Food Magazine <\/em>and came across a simple recipe for <strong><a href=\"http:\/\/www.marthastewart.com\/recipe\/baked-plantain-chips\" target=\"_blank\">Baked Plantain Chips<\/a><\/strong>. I&#8217;ve tried several different brands of banana chips from Trader Joe&#8217;s and Whole Foods, but I&#8217;ve never made them. I&#8217;ve seen plantains in the produce section before, but have never tried one. I picked one up while grocery shopping on Saturday. I knew from the recipe that I needed an unripe (green) plantain. Not a problem, all they had was green plantains.<\/p>\n<p>I preheated the oven to 350 degrees F.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17261.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2148\" title=\"IMG_1726\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17261.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17261.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17261-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>The first step was to peel my plantain. Thanfully, the same magazine had some how to steps that I could follow. The skin is super tough, you can&#8217;t peel it like a normal banana. You first slice along the seam.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1727.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2149\" title=\"IMG_1727\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1727.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1727.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1727-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I had to cut pretty deep to get through the skin.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1728.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2150\" title=\"IMG_1728\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1728.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1728.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1728-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>You then want to cut little windows from the seam cut. You can then use the tip of your knife to lift them from the plantain.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1729.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2151\" title=\"IMG_1729\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1729.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1729.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1729-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I had a couple windows take out huge plantain chunks, so my chips weren&#8217;t very symmetrical.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17301.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2153\" title=\"IMG_1730\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17301.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17301.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_17301-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>No big deal, the majority of my windows peeled right off. Most recipes I found online called for a mandoline, since I don&#8217;t have one, I used a sharp knife to slice my thin chips.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1731.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2154\" title=\"IMG_1731\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1731.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1731.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1731-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Next time I will probably go a little thinner &#8211; I liked the thinner chips of the bunch much better.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1734.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2155\" title=\"IMG_1734\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1734.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1734.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1734-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Sorry for the blurry photo&#8230; I used my iPhone and must have moved while\u00a0taking the photo.<\/p>\n<p>I got the plantains onto my non-stick baking sheet and sprayed them with garlic infused olive oil (The Everday Food recipe\u00a0used vegetable oil). I gave them a pretty good coating on both sides and then I sprinkled corse salt\u00a0 and ground pepper on them. I placed them into my 350 degree oven and set the timer for 15 minutes. I flipped them at 15 and then put them in for an additional 10 minutes. Probably should have just done 10 minutes per side, I overcooked them a bit.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1737.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2157\" title=\"IMG_1737\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1737.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1737.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1737-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>I was trying to explain the taste to Dan &#8211; he wasn&#8217;t interested in trying them, just not his thing. They had a distinct taste and texture to them &#8211; I compared it to corn nuts, minus the corn flavor. I really liked them and next time won&#8217;t cook them for as long. I could also see using regualr unripe bananas, canola oil, brown sugar or a cinnamon sugar coating on them for a sweeter version.<\/p>\n<p><a href=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1735.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-2163\" title=\"IMG_1735\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1735.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1735.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/11\/IMG_1735-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Anyway&#8230; it was fun to try something new and different. Next time I&#8217;m at the store, the plan is to pick up something else I&#8217;m not familiar with.
