{"id":181,"date":"2010-05-16T20:33:26","date_gmt":"2010-05-17T03:33:26","guid":{"rendered":"http:\/\/foodiddy.wordpress.com\/?p=181"},"modified":"2010-05-16T20:33:26","modified_gmt":"2010-05-17T03:33:26","slug":"teriyaki-chicken-kabobs","status":"publish","type":"post","link":"http:\/\/foodiddy.com\/?p=181","title":{"rendered":"Teriyaki Chicken Kabobs"},"content":{"rendered":"<p>Dan loves <a href=\"http:\/\/www.islandsrestaurants.com\/\" target=\"_blank\">Island&#8217;s Restaurant<\/a> and their &#8220;<a href=\"http:\/\/www.islandsrestaurants.com\/menu\/tacos.aspx\" target=\"_blank\">Yaki Tacos<\/a>&#8221; &#8211;\u00a0A few months ago I found a copycat recipe online and I recreated them. Part of the recipe included making\u00a0 the teriyaki\u00a0sauce. I wasn&#8217;t feeling like tacos, so I decide to make the sauce for kabobs instead. I had 1\/2 a pineapple left from the fruit salad and I wanted to use it up.<\/p>\n<p><strong>The Ingredients for the Teriyaki Sauce:<\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-182\" title=\"ingredients\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/ingredients_dsc01574.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>1 3\/4 Cups Water<br \/>\n1 Tablespoon Cornstarch<br \/>\n1\/2 Cup Soy Sauce<br \/>\n3\/4 Cup Light Brown Sugar<br \/>\n1\/2 Teaspoon Garlic Powder<br \/>\n1\/4 Teaspoon Onion Powder<br \/>\n2 Teaspoons Minced Fresh Ginger<\/p>\n<p>The first step is to add the water to a medium saucepan. I had the heat set to between medium and high. I then whisked in the cornstarch. I added all of the remaining ingredients and brought things to a boil &#8211; I then turned the heat down to medium and let it simmer for about\u00a0\u00a08 minutes.\u00a0It starts to thicken after about 5 minutes.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-183\" title=\"teriyaki\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/yaki_dsc01577.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>At this point I added some of\u00a0the juice from the pineapple that I had cut up &#8211; it was about 2 Tablespoons. Once I felt that the sauce was the right consistency, I extracted a cup of it and poured it in a bowl over the chicken. I decided to use Foster Farm&#8217;s chicken tenders. I threaded them onto the skewers and it worked out great! I have to say, touching and cutting raw chicken is NOT my favorite thing to do. I will dive into ground beef bare handed for meat loaf&#8230; but chicken is a different story. The slime factor is too huge for this girl.<\/p>\n<p><strong>The Simple\u00a0Kabob Ingredients:<\/strong><\/p>\n<p><strong><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-184\" title=\"veggies\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/veggies_dsc01581.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/strong><\/p>\n<p>Minus\u00a0the chicken&#8230; it was already in the bowl marinating. I got the veggies cut up while the teriyaki sauce simmered on the stove.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-185\" title=\"cut up veggies\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/cut_vegdsc01585.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>A rainbow of veggie\/fruit yum!<\/p>\n<p>The neighbors were having a huge family BBQ and I must have opened the sliding glass door 25 times during this kabob\u00a0process. Out with the food and camera, in to wash utensils, out\u00a0with camera&#8230; thankfully they were the side neighbors and the fence\u00a0is high enough to\u00a0hide my shenanigans.<\/p>\n<p>I constructed the skewers and took them and the remaining sauce out to the grill.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-186\" title=\"sauce\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/baste_dsc01588.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>I made one skewer with the pineapple mixed in with the peppers, onion and chicken&#8230; but I wasn&#8217;t sure how fast it would cook, so I decided to leave it out of the second skewer. That way, if it burned, I&#8217;d still have a full skewer of pineapple that I could throw on the grill at a later time.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-187\" title=\"grill\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/grill_dsc01590.jpg\" alt=\"\" width=\"400\" height=\"292\" \/><\/p>\n<p>I did end up putting the &#8220;all pineapple&#8221; skewer on about 10 minutes into the grilling, but it didn&#8217;t really matter that I separated the pineapple &#8211; the\u00a0other mixed skewer\u00a0did just fine.\u00a0Next time I will probably also spray the grill &#8211; the chicken stuck to it a bit at first.<\/p>\n<p>I basted the\u00a0kabobs with a much longer brush throughout the cooking process.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-188\" title=\"teriyaki chicken and pineapple kabobs\" src=\"http:\/\/foodiddy.files.wordpress.com\/2010\/05\/platter_dsc01596.jpg\" alt=\"\" width=\"300\" height=\"400\" \/><\/p>\n<p>They were perfection! Super moist with the right amount of teriyaki\u00a0flavor. I served them with a side of sticky rice.\u00a0I probably won&#8217;t buy store-bought teriyaki ever again. I love that I can use low sodium soy sauce when I make my own. \u00a0It was the perfect dinner for the amazing weather we had yesterday.<\/p>\n<p>I spent about 5 hours gardening during the morning\/afternoon and when I say &#8220;gardening&#8221; that&#8217;s sort of\u00a0a stretch &#8211; it was more like weed pulling and plant trimming. I should also note &#8211; I apparently used muscles that I didn&#8217;t even know I had.
