You all know how obsessed I am with my <a href=\"http:\/\/foodiddy.wordpress.com\/2010\/06\/18\/zucchini-pasta\/\" target=\"_blank\">veggie slicer<\/a>. I felt like I had been neglecting it &#8211; it had been weeks since I had taken it out of the box. I had zucchini in the fridge and all of the other ingredients listed in the <strong>Zucchini Pasta w\/Curried Cashew Pesto<\/strong> recipe. I&#8217;ve been fascinated by the raw food movement and wanted to try a different take on my normal &#8220;go to&#8221; <a href=\"http:\/\/foodiddy.com\/?p=656\" target=\"_blank\">faux pasta<\/a> dishes.<\/p>\n<p><strong>The Ingredients:<\/strong><\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1566\" title=\"IMG_1523\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1523.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1523.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1523-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>1 Clove Garlic &#8211; I used two Dorot crushed garlic cubes<br \/>\n1\/4 Cup Cilantro &#8211; tightly packed<br \/>\n3\/4 Cup Raw Cashews<br \/>\n1\/4 Cup Extra Virgin Olive Oil<br \/>\n1\/4 Teaspoon Curry Powder<br \/>\nSalt and Pepper to Taste<br \/>\n5 Medium Zucchini &#8211; I used two and had a small container of pesto left for future meals<br \/>\nShredded Beets &#8211; I used Trader Joe&#8217;s cooked beets &#8211; I sliced 2 of them up as a topper<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1568\" title=\"IMG_1524\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1524.jpg\" alt=\"\" width=\"336\" height=\"450\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1524.jpg 336w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1524-224x300.jpg 224w\" sizes=\"(max-width: 336px) 100vw, 336px\" \/><\/p>\n<p>In your food processor, pulse garlic, and tightly packed cilantro leaves. Add raw cashews, extra virgin olive oil and curry powder; process until almost smooth and season with salt and pepper. I added everything at once&#8230; because I&#8217;m a rebel like that and also because I failed to read the directions all the way through. \ud83d\ude09<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1569\" title=\"IMG_1526\" src=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1526.jpg\" alt=\"\" width=\"450\" height=\"336\" srcset=\"http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1526.jpg 450w, http:\/\/foodiddy.com\/wp-content\/uploads\/2010\/09\/IMG_1526-300x224.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>It was the most vibrant color of green. Eating it raw was a nice alternative to having a salad as a meal. I also think it would hold up well for a potluck style event. Finding people that love cilantro and curry might be the biggest obstacle.
